A fresh, protein-packed salad with chickpeas, cherry tomatoes, green onion and crumbled white cheese.

Chickpea & Cherry Tomato Salad

Ingredients

  • Chickpeas (1 can, drained and rinsed)
  • Cherry tomatoes
  • Green onion
  • White cheese (feta or similar)
  • Olive oil
  • Salt and pepper

Instructions

    Drain and rinse the chickpeas.

    Halve the cherry tomatoes.

    Finely slice the green onion.

    Crumble the white cheese.

    Combine everything in a large bowl.

    Drizzle with olive oil, season with salt and pepper, and toss gently before serving.
